Madeira Cake

- Our delicious sticky glazed madeira cake is perfect with a cup of tea!
- Ingredients:
- 250g Butter, softened​
- 120g Caster Sugar​
- 1tsp Vanilla Extract​
- 4 Eggs​
- Zest and Juice of One Small Lemon​
- 280g Plain Flour​
- 1 1/2 tsp Baking Powder​
- 1tbsp Milk​​
- 1/2 jar Cottage Delight Gin, Orange and Lemon Marmalade
Cooking Method
Pre-heat the oven to 190°C/170°C fan, grease and line loaf tin with parchment paper
In a bowl, beat the butter and sugar together with an electric whisk until light and creamy
Add the vanilla and then beat in the eggs one at a time. You may need to scrape down the sides of the bowl and the beaters
Add the lemon zest then beat in the flour and baking powder
Finally add the milk and mix until the batter is smooth
Pour the batter into loaf tin (fill 2/3 full) and bake for 50-55 minutes or until a cake tester or cocktail stick comes out clean
While hot, glaze the loaf with ​Cottage Delight Gin, Orange and Lemon Marmalade and leave to cool on a wire rack
Once cooled, for extra orange taste, using a small piping nozzle, insert Cottage Delight Gin, Orange and Lemon Marmalade into the bottom of the loaf in 6 places (equally distributed), slice and serve!
