Madras Burger

Summary
Wonderfully fresh, with delicious zingy flavour. Perfect for a summer BBQ or a twist on a cozy curry night.
Ingredients:
250g Chicken Mince
2tbsp Madras Curry Paste
1 white onion, finely chopped
1 egg, lightly beaten
60g cup breadcrumbs
Olive oil cooking spray
4 burger buns
1 gem lettuce, shredded
1 small red onion, finely sliced

Cooking Method

  1. Combine mince, curry paste, white onion, egg and breadcrumbs in a bowl. Shape mixture into four 2cm thick patties. Place on a plate and refrigerate for 20 minutes

  2. Heat a non-stick frying pan over high heat. Lightly spray patties with olive oil and cook for 5 minutes each side or until cooked through

  3. Place cooked burgers in burger baps. Top with lettuce and red onion. Dollop with your favourite sauce or extra Madras Curry Paste
