Summary
A home-made twist on this iconic, round, British biscuit, filled with Original Strawberry Whole Fruit goodness.
Ingredients:
115g unsalted butter
115g caster sugar
1 large egg
1 tsp vanilla extract
275g plain flour
1 jar Cottage Delight Original Strawberry Whole Fruit Jam
1 tbsp icing sugar for dusting

Cooking Method

  1. Lightly grease 2/3 (depending on size) baking trays.

  2. Put the butter and sugar in a large mixing bowl and beat together until well incorporated (pale and creamy).

  3. Add the egg and vanilla extract and beat together.

  4. Sift over the flour and mix to a crumbly dough.

  5. Gather the dough together and knead with your hands on a lightly floured surface until smooth. If the dough is sticky, work in a small amount of flour.

  6. Shape the dough into a flat disc, wrap in cling film and chill in the fridge for 40 minutes.

  7. Roll half the dough out on a lightly floured surface to a thickness of approximately 3 mm.

  8. Use a 6 cm round cutter to stamp out 21 circles, re-rolling the dough as necessary. Place on one of the baking trays.

  9. Repeat this process with the second half of the dough – then use a 3 cm round cutter to stamp out the centres of these circles. Place on the baking trays.

  10. Put the baking trays in fridge for 30 minutes.

  11. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4.

  12. Once chilled, bake the biscuits for 12-14 minutes, or until crisp and pale golden. (Don’t worry if the centres are still soft, they will harden once cooled.) Leave biscuits to cool for 5 minutes on a wire rack.

  13. To assemble, spread 1 tsp of Cottage Delight Original Whole Fruit Jam on each whole biscuit, then sandwich with the cut out biscuits.

  14. Lightly dust with icing sugar before serving.
