Rarebit

- Battle of the boarders. Perhaps the most famous Welsh dish of them all. Bubbling hot rarebit, featuring our own Smooth English Mustard.
- Ingredients:
- 4 slices of good quality bread
- 15g salted/unsalted butter
- 1 tbsp plain flour
- 120ml milk
- 75g mature cheddar cheese, grated
- Black pepper
- 1tsp Cottage Delight Smooth English Mustard
Cooking Method
Set grill to medium-high heat.
Lay the slices of bread on a baking tray and grill for around 2 minutes, until golden brown and crispy on one side. Turn over and remove from grill.
Meanwhile, melt the butter in a small saucepan and add the flour. Mix well for 30 seconds, then add half the milk. Stir well until the sauce is smooth, then add the remaining milk and mix again. The mixture should thicken up into a smooth, thick paste.
Add the grated cheese, mustard and black pepper. Cook for another two minutes, stirring constantly, until the cheese has melted and the mixture is smooth.
Spoon the sauce onto the untoasted side of each slice of bread, gently pushing it to the edges with the back of the spoon. (Don’t worry if it spills over the edges a bit).
Place back under the grill for approximately 5 more minutes, until the cheese is just beginning to brown. Serve immediately.
